🍝 Comfort Ziti Recipe | A Cozy, Balanced Baked Pasta for My T1D Life

✨ Sometimes You Just Need a Little Comfort


For me, pasta has always meant comfort. It reminds me of my mom and the baked dishes she made that filled the kitchen with warmth before anyone even sat down to eat. She loved making baked pasta — a true family favorite. This Comfort Ziti is my personal take on a cozy baked dish, inspired by the feeling of home and the simple joy of slowing down in the kitchen.


I didn’t grow up eating baked ziti with ricotta. Instead, I remember hearty pasta dishes that were rich, cheesy, and uncomplicated — the kind you make when you want people to feel taken care of. This version leans into what I love most: layers of pasta, a simple homemade tomato sauce, and little pockets of melted mozzarella hidden throughout the pan.



🍅 Homemade Diced Tomato Sauce


Ingredients

  • 2 can (28 oz) diced tomatoes ( If it's too much sauce for the ziti, save some for later)

  • 2 tbsp olive oil

  • ½ small onion, finely diced

  • 2–3 cloves garlic, minced

  • Italian seasoning (to taste)

  • Salt & black pepper

  • Butter and Cream (optional, for balance. Add to taste)


Instructions


  1. Heat olive oil over medium heat. Sauté the onion until soft.

  2. Add garlic and cook about 30 seconds.

  3. Pour in diced tomatoes with their juice.

  4. Add seasoning, salt, and pepper.

  5. Simmer uncovered 15–20 minutes until slightly thickened.

  6. Blend the sauce if you want a smoother texture.


Set aside — this is the sauce for your ziti.

🛒 Ingredients


Pasta + Sauce


  • 1 lb ziti pasta

  • 1 tbsp olive oil

  • pasta sauce

  • 8–10 oz fresh mozzarella

  • ¼–½ cup grated parmesan

  • Include Protein or Veggie Add-Ins


🌿 Protein or Veg Add-Ins (T1D-Friendly & Optional)


Living with T1D has taught me that balance isn’t about restriction — it’s about building meals that help me feel steady without giving up the foods I love.


  • Ground turkey or ground chicken — adds protein, which I’ve found helps me feel steadier.

  • Fresh spinach — softens into the sauce and adds texture without changing the cozy flavor.

👩🏽‍🍳 Instructions


1️⃣ Cook the Pasta


  • Boil ziti in salted water until just under al dente. Drain and set aside.


2️⃣ Combine ingredients


  • Toss pasta with most of the sauce in a large bowl.

  • Fold the mozzarella chunks — these melt into hidden cheesy bites.

  • Include Add-Ins (You'll need to season and cook the meat separately).

  • Spoon extra sauce over the top.

  • Finish with parmesan or shredded mozzarella (optional).


3️⃣ Bake


Bake at 375°F


  • Covered for 20 minutes

  • Uncovered for 10–15 minutes until bubbly and golden.


Let the dish rest for about 10 minutes before serving.



🌿 Notes From My Kitchen


  • Using fresh mozzarella gives a softer melt and better texture.

  • Adding spinach or a protein helps keep the meal feeling balanced without losing comfort.

  • This ziti reheats beautifully — perfect for slower days when you want something easy and familiar.


Sometimes you need a little comfort. Living with T1D has changed how I approach meals like this, but it hasn’t taken away the joy. I build comfort intentionally now — adding balance where I can and enjoying it without guilt. Because sometimes comfort is part of steadiness.
